One of my fav ways to make it is with roasted tomatoes, spinach, feta, chicken, and Trader Joe’s kale vegan pesto — DELISH! Plus it only takes about 15 minutes! The real trick though is to use NO water aka don’t follow the packages instructions lol.
INGREDIENTS:

Trader Joe’s cauliflower gnocchi
-
TJ’s kale vegan pesto
-
spinach
-
grape tomatoes
-
feta
-
chicken
-
olive oil spray
INSTRUCTIONS:

Spray the stove top with olive oil spray and begin cooking your chicken — I season mine with salt, pepper, and garlic powder

In another pan begin cooking your cauliflower gnocchi with olive oil spray and tomatoes about 7-12 minutes until it’s golden

Once cooked add spinach and 2 TBS of kale vegan pesto and mix together

Add everything to a bowl and top with chicken and feta
