Waking up to a fresh cup of coffee and making breakfast is by far my FAVORITE thing I look forward to each day — is that sad?! LOL .. I mean I’m sure someone out there feels the same way! Most days I am rushing out the house at 5am so I won’t lie I don’t get to make this every day but the days I have a later start it’s my go to!
I love making sure I get in a well balanced breakfast so I always try to get protein in first thing in the morning. Of course, there are so many ways to do this, but I love eggs when I get the chance to make them! I personally, love egg whites/egg beaters because I don’t care for yolks, but you can make this with eggs if that’s what you prefer, simple switch!
Here’s what you will need:

1-1/2 cup egg whites/ egg beaters/eggs

8-10 sliced cherry tomatoes

reduced fat feta - I use Trader Joe’s

1 cup spinach

Deli turkey
Instructions:

Spray a non-stick pan with olive oil spray and add tomatoes until slightly cooked

Add your egg mixture, spinach, deli turkey and let it cook about 3-5 minutes

Once it’s cooked you’ll add your feta, fold, and flip

Cook for another 2-3 minutes until done
I always add fresh fruit as a side to my morning breaky and some avocado if I need some extra fat! I’m been obsessed with grapefruit lately, so been loving that but berries are always a great option too!
