I saw this dish on my friend Sari’s blog and had to remake!
INGREDIENTS:

4-6 oz of salmon - I buy mine from TJ’s

Chili seasoning - I get mine from TJ’s too!

Salt, pepper

Olive oil spray or avocado oil

Pistachios
INSTRUCTIONS:

Preheat oven to 400

Line a cookie sheet with parchment paper. Spray with avocado oil. Place filets on top. Spray filets lightly with avocado oil

Spread avocado oil mayo on top of the salmon filets and season with chili lime seasoning or paprika

Place de-shelled pistachios in a ziplock bag and use the bottom of a cup to crush them. Sprinkle crushed Pistachios on top of the salmon -Bake for 10-15 mins!

I added a mixed greens salad on the side with a little feta and TJ’s pear vinaigrette
I LOVED this for an easy week night dinner, which was perfect for both John and I! Definitely try it and let me know what you think!
