Pistachio Crusted Chili Salmon
You gals know I’m all for a good protein dish! Usually I opt for chicken or ground turkey just because I am a creature of habit, but I have been on a salmon kick! It’s super easy to make, packed with healthy fats, and a good change up to your normal routine!

I saw this dish on my friend Sari’s blog and had to remake!

INGREDIENTS:

  • 4-6 oz of salmon - I buy mine from TJ’s

  • Chili seasoning - I get mine from TJ’s too!

  • Salt, pepper

  • Olive oil spray or avocado oil

  • Pistachios

INSTRUCTIONS:

  • Preheat oven to 400

  • Line a cookie sheet with parchment paper. Spray with avocado oil. Place filets on top. Spray filets lightly with avocado oil

  • Spread avocado oil mayo on top of the salmon filets and season with chili lime seasoning or paprika

  • Place de-shelled pistachios in a ziplock bag and use the bottom of a cup to crush them. Sprinkle crushed Pistachios on top of the salmon -Bake for 10-15 mins!

  • I added a mixed greens salad on the side with a little feta and TJ’s pear vinaigrette

I LOVED this for an easy week night dinner, which was perfect for both John and I! Definitely try it and let me know what you think!
